It seems obvious that hand washing — with active scrubbing and soap — should be more hygienic than a machine. After all, you can see and feel whether something is clean. You control the process. The machine just… runs.
But hygiene isn't about visible cleanliness alone. It's about eliminating pathogens — bacteria, viruses, and other microorganisms that are invisible to the naked eye. And on this measure, the science is clear and decisive.
The Temperature Problem with Hand Washing
The core issue with hand washing is a physical limitation: human skin can only tolerate water up to approximately 45–48°C before it becomes too painful to work with. Most people wash dishes in water that's between 38–45°C — warm enough to be comfortable, but not hot enough to be bactericidal.
Key pathogens that commonly contaminate kitchen utensils:
E. coli — survives at 45°C. Requires sustained temperatures above 60°C for elimination.
Salmonella — survives at 45°C. Killed at 70°C within seconds.
Staphylococcus aureus — survives at 45°C. Eliminated above 60°C.
Norovirus — highly heat-resistant. Requires 70°C+ for reliable deactivation.
Hand washing at 45°C cleans utensils visually — removes food residue, grease, and staining. But it does not reliably kill the bacteria that cause foodborne illness. Those pathogens survive the wash, remain on the utensil, and go straight onto the next meal served from it.

The Kitchen Sponge — An Overlooked Problem
Hand washing relies on a tool: the kitchen sponge or scrubbing pad. And this is where the hygiene picture gets significantly worse for hand washing.
Research consistently identifies the kitchen sponge as one of the most microbiologically contaminated objects in any home. Its moist, porous structure provides ideal conditions for bacterial growth. A sponge used for 3–4 days in an average kitchen contains bacteria in the hundreds of millions per square centimetre — including E. coli, Salmonella, and Campylobacter in many cases.
Every time you wash a plate with this sponge, you're running it across the surface. Soap reduces some bacterial load, but the sponge transfers residual bacteria from one utensil to the next throughout the wash session. The final rinse helps — but doesn't sterilise.
Key fact: A 2017 study published in the journal Scientific Reports found that kitchen sponges harbour up to 45 billion bacteria per cubic centimetre — and that microwaving or boiling them does not reliably decontaminate them. 1. Temperature: The wash water reaches 70°C. At this temperature, the thermal death point for the vast majority of pathogens is crossed. Bacteria are not just removed — they are killed.
2. Chemical action: Dishwasher detergent contains enzymes specifically designed to break down food proteins and fats at high temperatures. These enzymes are more effective than standard dishwash liquid because they're formulated for high-heat, machine-application environments.
3. Mechanical force: High-pressure water jets spray all surfaces of every utensil simultaneously. The force removes adherent food particles more effectively than manual scrubbing in many cases — particularly in hard-to-reach areas of curved utensils like kadai and dabbas.
What This Means for Indian Families
In Indian cooking, the same utensils — thali, katori, kadai — cycle through raw ingredients, cooking, serving, and eating multiple times a day. The stakes for cross-contamination are particularly high during monsoon season and summer months, when ambient bacterial growth is faster.
A 70°C wash cycle means every utensil that comes out of the Dishwasher is bacteriologically safe for the next use — not just visually clean. For families with young children, elderly members, or anyone with a compromised immune system, this is a meaningful difference.
The bottom line: Hand washing at human-tolerable temperatures does not sterilise utensils — it cleans them. A Dishwasher at 70°C does both. If hygiene matters to your family — and it should — a Dishwasher is the more responsible choice.
One Caveat
A Dishwasher at 70°C is more hygienic than hand washing under normal conditions.
